White Bean Dip

R and I had plans to grab drinks but I was hungry and wanted something to snack on in case we got caught up and never ate dinner. This was a quick and easy dip, similar to a spinach dip but without all the fat.
Ingredients
  • A few slices yellow onion
  • 1 Scallion
  • handful of Parsley
  • Tbs of Whole Grain Mustard
  • 1 Tbs Cumin
  • 1 Garlic Clove
  • Block of Aged Provolone
  • 1 Can White Beans
  • 2 Tomatoes, chopped
  • Chili Oil (optional)
I blended the onion, scallion, parsley, mustard, cheese, garlic, fresh pepper and cumin in my Cuisinart, streaming in about 1 tbs olive oil to make a pesto. Then I added in the beans and pulsed to mix. After that I hand stirred in the chopped tomatoes.
First I served it cold. Then I had a bite and decided it would be better hot. No problem, 2 minutes in the microwave followed by a sprinkling of parmesan and a drizzle of chili oil and JOILA! Bean Dip!
Served with sliced and oven-toasted wrap sprinkled with olive oil and oregano
