This recipe combined leftovers from my "Lemons to Lemonade" dinner along with various pantry items.
Ingredients: Measurements are approximate
1/2 Cup Sausage
1/2 Cup Spinach
1/2 Cup Cream Cheese
4 Eggs (whisked together)
1/2 Cup Feta Cheese
1/4 Cup Pesto
3-4 Sun Dried Tomatoes
Angel Hair Pasta
I started by preheating my oven to 250 degrees.
In my Cuisinart I combined the Spinach, Cream Cheese, Feta, Pesto, and Sun Dried Tomatoes. Then I folded in the leftover Sausage.
I cooked the pasta as directed until it was al dente (a few minutes short of cooked through).
I combined the Spinach mixture with the Angel Hair and added to a "Pam'd" casserole dish.
Then I poured the whisked eggs over the top of the casserole and topped with the Feta.
I cooked the casserole until in was brown on top, apx 20 minutes.

Cut into slices and serve.

While this recipe may include ingredients you don't have on hand, you can substitute items based on supply. You just want to ensure that you have a cheese/creamy item to smooth out the filler ingredients, and eggs to act as a binder.
Other variations that would be tasty are sauteed mushrooms & onions, or asparagus & ham- whatever your heart desires!
