Bone Marrow with Oxtail Marmalade

I did not make this but it was so interesting & delicious that I had to share. A few months ago I was watching a show on the Food Network called "My Favorite Meal" or something along those lines. The female chef with the spiky blond hair, I think she is Mario Batali's sous chef on Iron Chef America, was talking about this appetizer she had at Blue Ribbon Brasserie- Bone Marrow with Oxtail Marmalade. It caught my eye because about a year ago I tried bone marrow for the first time at Prune and it was one of the most delicious things I ever tasted. I had a chance last night to taste this delicious appetizer and it is a MUST try if you are ever in NYC. While the idea of bone marrow is a little freaky, it falls into the same category for me as foie gras, pate etc. You pull the marrow out of the bone with a little fork. The marrow itself resembles an uncooked egg white in consistency, but a little more buttery. Then there is the juice that accumulates during the cooking process. You spread this whole thing on toast and it is basically a tasty butter, no weird consistency or anything.
