Bone Marrow with Oxtail Marmalade
Blue Ribbon Brasserie- Bone Marrow with Oxtail Marmalade. It caught my eye because about a year ago I tried bone marrow for the first time at Prune and it was one of the most delicious things I ever tasted. I had a chance last night to taste this delicious appetizer and it is a MUST try if you are ever in NYC. While the idea of bone marrow is a little freaky, it falls into the same category for me as foie gras, pate etc. You pull the marrow out of the bone with a little fork. The marrow itself resembles an uncooked egg white in consistency, but a little more buttery. Then there is the juice that accumulates during the cooking process. You spread this whole thing on toast and it is basically a tasty butter, no weird consistency or anything.
